Chicken Lollipops! I prefer the stir fried version. That’s why I first deep fried them and then made a sauce to stir up the spiciness and elevate the taste. Stir frying the chicken with a sauce makes the chicken more tender. My family loves it!
Preparation:
Step 1- Marinade the Chicken Lollypops with 2 TBSP of lime juice, 2 TSP of salt, 1 TBSP of pepper powder, 1 TBSP ginger paste, 2 TBSP of garlic paste, 2 TSP of red chili powder and 2 TBSP of honey. Keep it aside for 20 mins.
Step 2- After 20 mins, add two eggs, 3 TBSP of corn flour, and 3 TBSP of refined flour/maida and 2 TBSP of chopped green chillies into the chicken. Mix it well.
Step 3- Next, in a saucepan pour 500 ml of refined oil. Once the oil is hot enough (in about 4- mins on medium high flame) deep fry the chicken lollypops. Keep in mind not to overcrowd the saucepan with too many of those lollypops. Fry them in batches. In about 5-7 mins on medium high flame your fried chicken lollypops should be ready.
You can serve them right away with a dip on side. However, I like mine stir-fried. If you like yours to be stir-fried, then follow the steps mentioned below.
Step 4- In a bowl, pour 2 TBSP of Dark Soya Sauce, 1 TBSP of Tomato Sauce or Ketchup, 1 TBSP of green chilli-sauce, and 1 TBSP of Vinegar.
Optional- If you like yours to be spicier, you may add 2 TSP of red chilli sauce as well to the sauce mixture.
STEP 5- In a saucepan, pour 2 TBSP of refined oil. After 20 secs, add 1 TBSP of ginger paste and 1 TBSP of garlic paste. Sauté it for 40 secs.
STEP 6- Add the chopped onion and keep sautéing.
STEP 7- After 40 secs, pour the sauce mixture, ½ TSP of salt, ½ TSP of pepper, 2 TBSP of chopped green chilies, 2 TBSP of chopped spring onions. Keep sautéing everything for another 20 secs.
STEP 8- After 20 secs pour 4 TBSP of water into the saucepan. Let it come to a boil. Once t comes to a boil lower the flame let it cook for 40 secs.
Optional- You may add 6 drops of fish sauce at this point of time.
STEP 9- After 40 secs, throw in the chicken lollypops. Coat the lollypops with the sauce nicely.
STEP 10- Your Stir Fried Chicken Lollypops are ready to be served.
