Panko Fried Fish Indian Style! I am a fish lover. I keep experimenting with different styles of cooking a fish. My family loved this slight twist to a Bengali fish fry. This recipe is a fusion. I marinade the fish first in a Maharashtrian-style paste and then leave it overnight. On the other hand I coat the fish in a style which is very Kolkata-fishfry-style and then I finally coat it with Panko bread crumbs which is a Japanese-style bread crumb. Try it, you might like it.
Preparation:
STEP 1: Make a paste with all the aromatics. In a mixer grinder throw in the aromatics first- coriander Leaves, mint leaves, curry leaves, green chillies, ginger, garlic and coconut. Add a splash of water. Once you have a smooth paste, add in the masalas- turmeric powder, cumin powder, red chilli powder, coriander powder and salt. Blend it well. Then squeeze half a lemon and mix it well.
STEP 2- Marinade the fish with the paste and keep it aside for 30 mins. Add salt to taste if you need.
STEP 3- Take two plates and one bowl. On one plate take refined flour/maida. In the bowl beat two eggs and on another plate mix panko crumbs and a pinch of salt.
STEP 4- Coat the fish FIRST with refined flour/maida, then dip it into the beaten eggs and then coat it with the panko crumbs as shown in the video. Once you’ve coated all the fish fillets keep them inside the refrigerator for 30 mins.
STEP 5- After 30 mins, take the fish out of the refrigerator.
STEP 6- In a saucepan pour 250 ml of refined oil. In about 4 mins on medium high flame the oil should be hot enough.
STEP 7- Throw in the coated fish one by one. Fry them in batches. Try not to overcrowd the saucepan.
STEP 8- Fry the fish for 3 mins on each side. Keep the flame on medium high. The crust should turn golden in colour.
STEP 9- After 6 mins, your fish should be ready.
STEP 10- Serve the fish with a dip on the side. A mayo dip or a sweet chilli sauce will perfectly go well with it.
