Loita macher Bhorta/ Bombil Bharta/Bombay Duck Mash. This is again a dish which has been handed down through the generations. Bharta means, anything that has been broken down to almost a dry paste kind of a texture. This spicy Bombay-Duck recipe will fire up your metabolism and leave you wanting more. We add cubed eggplants to mellow down the spice and add a different texture. It’s a side with white rice as your carb. Making this dish is an unique process of cooking a fish!
Preparation:
STEP 1- Marinade the fish with 1 TSP of Salt and 1 TSP of Turmeric Powder. Keep it aside. Marinade the diced eggplants with ½ TSP of Salt and ½ TSP of Turmeric Powder.
STEP 2- In a Kadhai, pour 6 TBSP of Mustard Oil. Once oil gets heated add the eggplants. Fry them till they turn light brown in colour. Take it out and keep it aside.
STEP 3- Add the marinated fish and cover it with a lid. Cook it for 3 mins. After 3 mins take off the lid. You will see the fish leaving a lot of water. Remove the fish bones as shown in the video.
STEP 4- After removing the fish bones, it’s now time to add all the remaining ingredients- onion paste, garlic paste, red chili powder, remaining turmeric powder, salt and the fried eggplants. Mix it well and cover it with the lid. Cook it for 10-12 mins. Keep stirring in between as it might stick to the bottom.
STEP 5- After 10-12 mins your fish should be ready.
STEP 6- Serve it as a side to a hot plate of Rice.
